Grace Mountain is back!

There's a new pair of hands on the stove at Grace Mountain.

Fresh Folio — the kitchen many of you still know as Die Ou Pastorie Deli — has taken over the Grace Mountain tomato sauce business. Guido and Leandri collected the cooking and preparation equipment this week, sat down with founder Mike for the handover, and have already put the first pot on to boil.

What Grace Mountain is

Grace Mountain is a proper tomato sauce: real tomatoes, cooked down in small batches, packed in convenient 1 kg foil bags with a four-month shelf life and no refrigeration needed until opened. It was built for kitchens — chefs who want a consistent, honest base sauce without the industrial aftertaste — and the recipes and preservative certification come across to Fresh Folio intact.

Thank you, Mike

Mike spent two years getting this product right. He developed the recipes, found the packaging, earned the certification and won over the first customers. Circumstances meant he couldn't carry it forward himself, and he has stepped back — but not before spending a day in the kitchen with Guido and Leandri, passing on the process personally. Everything good about this sauce is his work. We're grateful, and we wish him everything of the best.

What happens next

Fresh Folio will produce in batches: a run of sauce cooked over a few days, then sold down before the next batch goes on. A test run is done and the first production batch follows shortly.
